GARAM DI BORNEO

Abstract

Secara umumnya kajian in merangkumi Pulau Borneo, namun ia hanya memberi perhatian secarasepintas lalu kepada wilayah pesisir pulau tersebut dan corak bentuk pengeluaran dan penggunaangaram "maritim", yang dianggarkan tidak jauh berbeza dengan wilayah-wilayah pesisir Asia Tenggarayang lain. Ia memberi tumpuan khas pada keadaan di dataran tinggi, di mana garam laut yang diimpotdan garam buatan tempatan daripada air garam wujud bersama. Ia menyelidiki secara berurutan,terutamanya dalam kalangan beberapa etnik yang dipilih di kawasan pedalaman. Mereka ini adalahobjek kajian samada kepada beberapa kerja lapangan yang telah dilakukan secara peribadi atau kepadasekumpulan hasil penulisan yang penting yang melibatkan perkara-perkara berikut: dunia rasa,terminologinya, dan status garam; kebarangkalian kumpulan-kumpulan nomad hidup tanpa garam;kaedah-kaedah penyediaan makanan, pengkategorian budaya yang berkaitan, dan peranan garam;teknik-teknik pengawetan makanan, dengan dan tanpa garam; sumber air garam, taburan mereka, danteknologi pembuatan garam di kawasan tanah tinggi; corak perdagangan garam di dalam dan ke datarantinggi dan konteks ekonomi mereka; kepentingan politik dan implikasi mereka dalam perspektif sejarah;dan makna simbolik dan peranan ritual garam yang tidak berapa ketara.
